Blueberry & lemon cookies
Makes 24 biscuits
Ingredients:
175g Plain Flour
1 tsp mixed spice
110g butter
110g caster sugar
Grated rind of 1 lemon
75g blueberries
1 egg, beaten
Method:
Sift the flour and spice into a bowl, add the butter and rub it in with your fingertips. Add the sugar, lemon rind and blueberries and stir, add the egg and mix to form a firm dough.
Turn out onto a floured surface and knead and shape into a sausage about 20cm long and 5cm wide. Wrap in clingfilm and chill in the fridge for about an hour.
Preheat the oven to 180c/gas 4, lightly grease a tray. Unwrap the dough and cut int 5mm thick slices. Place on the tray spacing a little apart. Bake for 15-18 mins until they are pale golden in colour, cool on the tray for a few minutes before sprinkling with sugar and putting on a wire rack to cool.
