Pork and bean one pot stew
Ingredients:
2tsp smoked paprika
900g diced pork
200ml white wine
420g butter beans, drained
350g sweet potato, cubed
2 sprigs rosemary
1 tsp oregano
400ml hot chicken stock
1 bay leaf
410g tin haricot beans
Method:
Heat your slow cooker or preheat oven to 170c/gas3
Coat the pork in the paprika, salt and pepper, brown in a little oil, place into slow cooker or casserole dish, pour wine into pan to deglaze the pan, scraping any pieces from the edges and bottom, add the herbs and stock, simmer for 5 mins.
Add the butter beans, haricot beans, sweet potatoes to the pork and mix before adding the liquid. Cook for 2 hours or until the pork is tender.
